Ingredients

Bananas
large and ripe

Egg

sunflower or vegetable
Instructions
Line your muffin tray with muffin cases and set aside.
If using a conventional oven preheat to 180C/356F
If using an Aga you will be using the Baking oven or roasting oven with cold shelf fitted
Mash the bananas with a fork in a large bowl until the are no big lumps
Measure out the oil, sugar and egg and add to the banana. Mix to combine
Measure out the rest of the dry ingredients annd stir those together
Add dry ingredients to the bowl and mix together with a wooden spoon. Do not over mix or you will get heavy muffins.
Just mix until just incorporated
Using a tablespoon, scoop the mixture into the muffin cases. There shoud be enough mixture for 1 rounded tablespoon per case. Try to keep them even.
Bake in the oven for 20-25 mins or until golden and a skewer that is inserted comes out clean.
Remove from the oven and allow to cool on a cooling rack for about 5-10 mins.
They can be eaten warm or stored in a cake tin for up to 4 days.
Notes
Yes these can be stored for 4 days but I highly doubt they will last that long once you have tasted them
