Everyone has a few bananas from time to time that have gone very ripe. This is the perfect way to get those used up in a delicious way. My family love them!

They are light and moist and take so little work that you will have a tasty treat in no time at all.

How to make The Best Banana Muffins

Learn how to make the best Banana muffins you have ever tasted.

Equipment

  • Muffin cases
  • Muffin tray

Ingredients
  

  • 3 Bananas large and ripe
  • 1 Egg
  • 1 1/2 cups Plain flour
  • 1 tsp Baking powder
  • 1 tsp Bicarbonate of soda
  • 1/2 tsp Salt
  • 3/4 cup Granulated sugar
  • 1/3 cup Oil sunflower or vegetable

Instructions
 

  • Line your muffin tray with muffin cases and set aside.
  • If using a conventional oven preheat to 180C/356F
    If using an Aga you will be using the Baking oven or roasting oven with cold shelf fitted
  • Mash the bananas with a fork in a large bowl until the are no big lumps
  • Measure out the oil, sugar and egg and add to the banana. Mix to combine
  • Measure out the rest of the dry ingredients annd stir those together
  • Add dry ingredients to the bowl and mix together with a wooden spoon. Do not over mix or you will get heavy muffins.
    Just mix until just incorporated
  • Using a tablespoon, scoop the mixture into the muffin cases. There shoud be enough mixture for 1 rounded tablespoon per case. Try to keep them even.
  • Bake in the oven for 20-25 mins or until golden and a skewer that is inserted comes out clean.
  • Remove from the oven and allow to cool on a cooling rack for about 5-10 mins.
    They can be eaten warm or stored in a cake tin for up to 4 days.

Notes

Yes these can be stored for 4 days but I highly doubt they will last that long once you have tasted them

Useful things for making banana muffins

These muffins don’t really require much in the way of special equipment. You will only need a muffin tray and some muffin cases. A large bowl for mixing is also an essential. Here are links to the ones I use;
