If chocolate be the food of love…..These are the best sourdough chocolate brownies EVER! With Valentines day just a around the corner why not indulge in chocolate, the food of love. The best bit is that this is fermented grain so it is good for the gut. That makes it a health food right?
This is a great recipe to use up your sourdough starter discard with a sweet chocolatey treat.
Using up a sourdough starter discard
When you have a sourdough starter you will have to feed it everyday. If you don’t use or discard some of that starter you will end up with a huge amount of starter.
I hate waste so I make sure that I make something with my discard. What better way to reduce waste is chocolate and these are the best sourdough chocolate brownies you have ever tasted.

These are a chocolate lovers dream. Soft, fudgie and so easy. You will want to make them everyday. I will not be held responsible for you having to buy bigger knickers.
How to make The Best Sourdough Chocolate Brownies
Ingredients:
- 6oz Dark chocolate (broken)
- 4oz Butter cubed
- 6 eggs
- 1tsp vanilla essence
- 1 1/2 cups Sugar
- 3/4 cup Sourdough starter
Method: How to make sourdough chocolate brownies
- Break up the chocolate bar into chunks. I smash my bar against the work surface before I open it to save on extra work.
- Cut up the butter into cubes and add both the chocolate and butter to a heat proof bowl.
- Put a pan of water on to boil and rest the bowl on top to create a double boiler
- As the chocolate and butter starts to melt, gently stir them together until you have a glossy chocolate liquid.
- Remove from the heat
- Add the sugar and vanilla essence to the melted chocolate and butter.
- Mix it all together
- Next measure in the starter and the eggs. I always make sure to crack the eggs into a separate bowl first so if I do happen to find a bad egg it doesn’t spoil my baking. So far that has never happened, but like I said, I hate waste.
- Stir together the eggs and starter to the chocolatey mixture.
- Pour the mixture into a lined 8×12 tin and bake in the oven for 10 minutes at 180 ℃
- At this point you can add chocolate chips if you want to.
- Return to the oven and bake again at 180 ℃ for 15-20 mins or until a skewer comes out clean when poked into the centre.
- Allow to cool on a cooling rack for 5-10 mins before cutting up into squares
- Now try to get a quick taste before the children demolish them ?
