These delicious savoury muffins are a fantastic alternative to the conventional breakfast. They are great on the go or as a part of a picnic. Learn how to make these cheese and bacon muffins so when the sun shines you can head outside for a picnic brunch or just sit in the garden with your breakfast muffin.

How to make Cheese and Bacon Muffins
Ingredients
Dry ingredients
- 2 Rashers of Bacon
- 1 cup of Grated cheese
- 2 Spring onions finely chopped
- 2 cups Flour
- 3tsp baking powder
- 1tsp Salt
- 1tsp Black pepper
- 1tbsp Sugar
- 1tsp Thyme
Wet ingredients
- 1 Egg
- 1 cup Milk
- 1tsp English mustard
- 1/3 cup Butter (melted)
Method – How to make cheese and bacon muffins
Dry ingredients
- Pre heat the oven to 200C (400F) in a conventional oven. I baking in an Aga then you will be using the baking oven or the roasting oven with the cooling shelf in.
- Line a muffin tray with paper cases and set aside.
- Cook the bacon in a dry cast iron pan until crisp then set aside to cool.
- Meanwhile grate your cheese and chop the spring onions as finely as possible.
- In a large bowl mix together the flour, salt, baking powder, sugar and Thyme. I am using a cheese with pepper in, but otherwise I would also add the 1 tsp pepper to this mix.
Wet ingredients
- In a separate bowl mix together the wet ingredients. I find it easier to combine them if I slightly melt the butter before I add it in.
- Whisk to combine the wet ingredients.
- Take the bacon, spring onion and cheese and add it to the dry ingredients. Stir them into the flour mixture to evenly distribute them then make a well in the middle.
- Pour the wet ingredients into the well in the dry ingredients then using a wooden spoon carefully mix together.
- Don’t over mix or the muffins will be very dense. You get a much lighter muffin if you just combine the ingredients as little as possible.
- Divide the mixture between the muffin cases. They should be about 3/4 full
- Pop the muffin try into the oven and cook for 20 mins in a conventional oven. In Madame Aga it may take more or less time as she can be a tricky little madame so check them by poking a skewer into the centre of a muffin. it will come out clean when cooked through.
- Remove the muffin tray from the oven and put the muffins on a wire rack to cool.
- You can eat them warm with a bit of good butter or pop them in a sealed tin for later.
