How to make The Best Fluffy Sourdough Pancakes in town
Sourdough pancakes are a fantastic way to use up sourdough discard. If you have never made sourdough you can read my How to make a sourdough starter here. if you have a starter you know that it need to be fed everyday and so there will be discarded starter every day.
Pancakes are so easy to make and so quick. I can have a batch made up in less than 10 minutes.
Types of pancakes
This recipe makes American style fluffy pancakes, but you can make crepes from sourdough as well.
These are soft fluffy and delicious. They only need a few ingredients and no resting period so you can make them straight away.
Ingredients
- 1 cup Sourdough starter
- 1 Egg
- 1tsp Vanilla essence
- 1/2 tsp Baking powder
Method: How to make the Best fluffy sourdough pancakes.
- Start by mixing together the sourdough discard to the other ingredients. Whisk together using a ballon whisk.
- If you are cooking on an Aga you will be cooking on your simmering plate. Otherwise set a cast iron pan on a medium heat to warm up.
- On the Aga place a piece of bake o glide over the hot plate.
- On a regular cooker add a tiny bit of oil to a warmed pan.
- Using a 1/4 cup measure drop 3 pancakes onto your pan/bake o glide.
- When bubbles start to form and the pancakes are firming up around the edges flip them over to cook on the other side.
- Once they are cooked through put them in the oven to keep warm.
- Now do that all again until there is no mixture left.
- This should make appropriately 8-9 pancakes
- Stack your pancakes and add the toppings of your choice. A firm favourite here is bananas with Maple syrup.
