As the weather is warming up most of us are looking for a lighter alternative for breakfast. Granola is a great alternative to heavy cooked breakfast, but I find that most need a huge amount of sugar or syrup to bind the granola chunks together. Then I came across the idea of sourdough discard to bind the chunks together. Bingo! Stick with me and I’ll teach you how to make delicious homemade Sourdough granola with a hugely reduced amount of sugar, but just as tasty.
Why Sourdough?
Sourdough is an amazing thing. Not only does it taste great, but the long slow fermentation process eats away all of the parts of the grain that we as humans find difficult to digest. This means that it spends less time in our gut. More nutrition is passed on with less energy expended trying to break it down. Your gut will be so happy.
Some people with intolerance to grains find that they can tolerate them again when fermented. This isn’t the case with an allergy or illness that prevents the person eating the grain. That said, for those of us that just feel a bit bloated or sluggish it may offer a relief.

How to make Delicious Homemade Sourdough Granola
The first part of this process is to ferment the first set of ingredients. You can make this without the long fermentation process, but you will get so many health benefits that I would suggest you don’t skip this step
- First measure out the pre ferment ingredients into a bowl and combine them together.
- Cover with a tea towel and let it rest for at least 3 hours. You can make this at night and leave it to ferment overnight. This means that it is ready to bake in the morning.
- After the fermentation time, preheat your oven and gather the rest of your ingredients.
- Mix together the other ingredients in a bowl then add them to the now fermented ingredients.
- Spread the mixed ingredients onto a baking sheet that has been lined with baking parchment or Bake o glide. Im a big fan of the Bake o glide because nothing sticks to it. This makes cleaning up so much easier. I have better things to do with my time than scrubbing pans.
- Bake this granola in the oven at 180°C (356°F) for 20 mins.
- Take out the tray and turn it around
- Now bake again for 20 mins until golden
- Remove form the oven and allow to cool completely before adding extras to it.
- For extra crunchy granola, turn off the oven at the end of the cooking time and pop open the door. Leave to rest in the oven for 30 mins the remove and cool completely.
- Now you can add your granola to milk or as we enjoy it, with yoghurt.
I hope you enjoy your crunchy granola for breakfast. This is one of those recipes that you can add all of your favourite things to. You can change it so much by what seeds or nuts you add to it. You can even add cacao nubs to make a chocolate granola. It’s so versatile and delicious.

Homemade Rustic Sourdough Granola Recipe
Ingredients
Pre Ferment ingredients
- 1/2 cup Sourdough discard
- 1/4 cup All purpose flour
- 2 tbsp Warm water
- 1 3/4 cups Rolled oats
- 1 tbsp Maple syrup
Other ingredients
- 1 1/2 tbsp Light brown sugar
- 1/4 tsp Salt
- 1 cup Mixed seeds, nuts and fruit
- 2 tbsp Coconut oil melted
- 2 tbsp Desiccated coconut
Extras
- dried fruit, coconut, cacao nibs
Instructions
Pre-Ferment
- Combine all of the pre ferment ingredients together into a bowl and set aside for 3 hours
- At the end of the 3 hours pre heat the oven to 180°C (356°F)
- In a separate bowl, combine the rest of the ingredients except the extras.
- Mix these ingredients into the now fermented ingredients and mix well.
- Spread the mixed ingredients onto a baking sheet lined with baking parchment of bake o glide.
- Bake in the oven for 20 mins, take out and turn the tray around, then bake again for 20 mins.
- Remove the tray from the oven and leave to cool completely .
- Once cool stir in any extras you might want to add.
