Christmas dinner just isn’t complete without a dollop of cranberry sauce. Yes, yes I know there is more to a Christmas dinner than the cranberry sauce, but I personally would feel cheated without it.
It is readily available in the shops pre made in jars, but it is full of additives and preservatives that I just don’t want in my belly. Plus its the easiest thing in the world to make.

There are really only 2 ingredients:
- Cranberries
- Sugar
Whatever the weight of cranberries, you will need the exact same amount of sugar.
Method:
- First rinse off the cranberries and put them in a heavy bottomed pan.
- Next, heat them up until they start to burst and let out the juices.

- Next, tip in the sugar and stir to combine.
- You can use a jam thermometer if you have one, but really you are just looking for the sugar to be completely melted in and the fruit to be thickening slightly.
- Don’t over cook this or you will end up with cranberry toffee. It only takes a few minutes to bring it together and up to a rolling boil.
- You can make on the day and serve immediately or pop it into jars so you are prepared. Or even, give it away as gifts to your friends.
